Chef Juan Garrido has the great talent of managing the fine details of flavors, while providing quantities for events of all sizes, whether it’s 50 or 500 guests.  This is what makes catering great catering.

The success of Cassandra Fine Catering in the Dallas Metroplex is showing a trend for more and more private events, whether for family reunions, weddings, anniversary celebrations, and more.

“When the season changes it is important to change your menus to reflect what is appropriate for that time of year” Says Chef Garrido. “Fall and winter lend themselves toward heartier, richer flavors and comfort foods. This season we will be using braised Beef Cheek in our homemade ravioli and Berkshire Pork Chops.  And we’ll be introducing our catering clients to the decadence of Wagyu Rib Eye Cap, which just melts in your mouth a wonderful cut that is totally unexpected at a catered event.”

Garrido’s fresh recipes reflect great flavors from every culinary tradition, and a customized approach to serving the client and event host.  The core seasonal menus at Cassandra Fine Catering are a place to start, but the company prides itself on really listening to each client, to capture the vision of the event so that the food creates and fills the experience to make the event a wonderful celebration.  Along with his experience with some of North Texas top culinary teams, Chef Garrido has also led catering teams for some of the area’s top fine caterers, along with helping lead the culinary team for the opening season of the new Dallas Cowboys Stadium.

Wonderful article! As a member of the CFC Team, I feel that we are extremely lucky to have such a talented chef – and of course get fantastic meats from Winn Meat Co.
