Winn Meat Company Supplies Protein to Award-Winning Restauranteur Jason Dady



Jason DadyDALLAS (December 9, 2009) – Jason Dady, one of the Southwest’s brightest culinary stars, is leading the San Antonio restaurant industry with the help of proteins from Winn Meat Company.

After earning recognitions for four successful San Antonio restaurants (The Lodge Restaurant at Castle Hills, Two Bros. BBQ Market, Bin 555 Restaurant and Wine Bar and Tre Trattoria), Dady’s newest venture is Insignia at the Fairmount Hotel, with an emphasis on small plates, fun and casual with a twist of classy plate-ups. Winn Meat Company was able to source old world-cured artesian Virginia ham from Edwards Co. for this project.

At The Lodge at Castle Hill, the food is New American with French influences. Moulard Duck “Foie Gras En Terrine” with Bing Cherries, Grilled Texas Bobwhite Quail with Creamy Blue Cheese Farrotto, Pan Roasted Airline of Guinea Fowl with Vidalia Onion Petals and dishes featuring rabbit, lamb, and tenderloin are all expertly prepared using the Texas craft of cooking by Lodge Chef Robby, using proteins supplied by Winn Meat Company.
Two Bros. BBQ Market s like walking into a ranch with a family friendly playground, featuring true Texas Pit BBQ and one of San Antonio's largest playgrounds. They are smoking up Winn Meat Company’s Sterling Silver Briskets. And at Binn 555, tapas and small plates with an emphasis on Mediterranean Italian feature Serrano Ham Wrapped Dates with Marcona Almonds, Deep Fried Pancetta with Whole Grain Mustard Aioli, Braised Rabbit Tamales with Carrot Escabeche Puree and Veal Meatballs with Cinnamon and Peach.

Tre Trattoria is the best antipasto and brick oven pizza in Texas. They are using the Salumaria Biellese product line Winn sources from New York. For six generations, the Italian family has been curing meats old world style, like Coppa Finocchionio, Sopressetta Prosciutto di Parma, Bresaola and Saucisson sec Basquese. Winn’s Natural Chicken, Beef Short Ribs and making house cured Guanciale with our Snake River Farms Kurobuta pork jowls are also featured in Tre Trattoria dishes.

Jason DadyChef Dady's dedication to his mission and passion for food has been recognized on a national, regional and local level. In 2009 he was named 40 under 40 "Rising Star" from the San Antonio Business Journal. He received national acclaim in February 2004 with a "Rising Star" chef award by Restaurant Hospitality. And the restaurants have received rave reviews from Southern Living, Bon Appetit, Texas Monthly, Texas Journey, San Antonio Business Journal, Texas Magazine, Country Lifestyles, San Antonio Magazine and San Antonio Express-News.

Chef Dady studied at Texas Tech University and graduated with a B. A. in Restaurant, Hotel and Institutional Management. Upon graduation he moved to San Francisco to attend the prestigious California Culinary Academy (CCA). While in California, Chef Dady worked at the then world renowned Stars Bar and Dining under the tutelage of Chef Chris Fernandez. Upon graduation from the CCA, Chef Dady traveled north to Napa Valley and Beringer Wine Estate. Chef Dady honed his skills and etched his New American style of cooking under Executive Chef David Frakes. Dady also participated in the opening of two restaurants. His passion for the restaurant industry, food knowledge and work experience makes for an exceptional understanding of the complete food and wine experience of each guest.

Dady’s family roots are firmly set in the hospitality industry. Having grown up with one set of grandparents (Gale and Ollie Dady) owning a small tavern for nearly 40 years, Chef Dady learned the importance of every customer. His maternal grandfather (Charlie Murphy) was a master butcher and the locals' favorite meat expert. Chef Dady still uses his grandfather’s butcher knives at his restaurant today.

At an early age Chef Dady fell in love with cooking and the art of food, having growing up around both his grandmothers’ cuisine. Dady's passion grows stronger every day and he has a simple philosophy, "Work hard and strive to be the best. Nothing less."

Chef Dady, along with his wife, Crystal, and his brother, Jake, have opened the Lodge with one goal in mind, "Be the best."
