Chef Barsotti’s original recipes, incorporating local ingredients at every opportunity, and a Texas connection with the distinctive approaches of Northern Italy, continually capture the imaginations and palates of guests all around. His understanding of the fine and nourishing things Texans love about their state and its food combines with expert experience of authentic Italian culinary traditions first-hand in all of his fine work in the kitchen and recipes at Nonna’s Highland Park location.
Chef travels to Italy and Europe frequently for inspiration, and his menu and recipes reflect the Northern Italian traditions of pastas with tender proteins and cheeses, braising and grilling. Menus with fresh recipes evolve and change with every night, with a foundation of regular recipes everyone loves. So what you’ll find on the dinner menu are pasta recipes like Chef’s Pici with Bandera Quail, pancetta and braised greens and Windy Meadows chicken stuffed with ricotta and coppa. A beautiful veal cutlet with prosciutto, fontina with sage and mushrooms, panna and polenta is a favorite on Chef’s late winter menu in March. Tortelli of Wagyu beef with sugo, mushrooms and celery root puree also wows guests on the March menu. Pizzas also are topped with Chef’s wonderful housemade sausages.
