New in 2011 is The Commissary, one of several dining destinations in One Arts Plaza that also creates a street level energy and excitement in fresh flavors for everyone to enjoy on Routh Street, just steps away from the Margot and Bill Winspear Opera House.

Chef John Tesar has created a concept and menu at The Commissary that is all about great proteins in fresh recipes that include combine the familiar in new ways that satisfy.  Burgers and hearty sandwiches filled with top natural meats are core to Chef Tesar’s Burger Bar offerings, with favorites like The Magic Burger, with aged cheddar, applewood smoked bacon, lettuce, tomato and red onion and pickles on a toasted English muffin; The BIG TEX that is ancho chili rubbed, with salsa cruda, avocado relish and pickled jalapenos with chipotle mayo on a sesame seed bun; The Rib, with braised short ribs, collard greens, horseradish mayo on a brioche bun;  The Dallas with roasted poblanos, pepper jack cheese and BBQ sauce on a sesame seed bun;  The Farmer with a fried duck egg and speck on a brioche bun with Échiré butter and white Vermont cheddar cheese; and The Tail End, with braised pigs tail, ground pork, ground beef,  topped with roasted pork belly, green tomato chutney and jalapeño mayonnaise on a brioche bun.  The menu also features Pork Belly and Collard Green Sliders.

The Commissary Large Plate menu includes stars like the Sous Vide Hanger Steak Frite and Roasted Organic Chicken with sautéed chicken liver, mortadella, celery hearts and panzanella salad.  Chef Tesar also features “The Table” tasting room with canapes, amuse-bouche, a cheese cart and a candy cart to finish.  Fresh sangrias and a great wine list are also generating positive conversation about The Commissary.

The Winn Meat Company team works closely with The Commissary culinary team to provide all natural beef to the kitchen, along with top pork, lamb, organic chicken, bacon and more.
